We all love a good pancake! However, they are not the best for you and your waistline. Here is a recipe for my alternative. The PROTEIN pancake. No flour. Lots of protein. Feel free to add some blueberries or dark chocolate chips (or whatever you want). I am still experimenting….so stay tuned!
1/2 cup Egg Beaters
1/2 cup low fat cottage cheese
1/2 cup quick cooking oatmeal
1/8 tsp Baking Powder
1 packet TRUVIA
Cinnamon to taste
Directions: (makes approximately 4 pancakes)
Preheat a pan to a medium heat and spray with nonstick cooking spray. Mix the Egg Beaters and cottage cheese in a mixing bowl. Add oatmeal, sweetener, baking powder and cinnamon and mix until combined. Spoon 1/4 of mixture onto pan and spread into a pancake shape. Cook until bubbles start to form around pancake then flip and cook other side. Serve with some maple syrup or warm peanut butter. YUM. Enjoy

I am not sure where this started. But it is STUPID. We wonder why childhood obesity is rising at record rates. We wonder why children can identify what a french fry is and not a potato. We wonder why kids love strawberry splash drinks but hate actual strawberries. REALLY?
Vegetable are GOOD FOR YOU. If you eat them growing up, you will most likely continue to eat them as an adult. Yes, kids do not like to “eat their vegetable”. TUFF. As a kid I had to sit at the table until I did. Sometimes I sat at the dinner table by myself for an hour after dinner until I realized that I was not going to win and I would stomach down the cauliflower. It boggles my mind that people can think that this is remotely healthy.
Bottom line. Eat.your.vegetables. — real ones.
