PROTEIN Pancakes!

We all love a good pancake! However, they are not the best for you and your waistline.  Here is a recipe for my alternative.  The PROTEIN pancake.  No flour.  Lots of protein.  Feel free to add some blueberries or dark chocolate chips (or whatever you want).  I am still experimenting….so stay tuned!


1/2 cup Egg Beaters

1/2 cup low fat cottage cheese

1/2 cup quick cooking oatmeal

1/8 tsp Baking Powder

1 packet TRUVIA

Cinnamon to taste

Directions: (makes approximately 4 pancakes)

Preheat a pan to a medium heat and spray with nonstick cooking spray. Mix the Egg Beaters and cottage cheese in a mixing bowl.  Add oatmeal, sweetener, baking powder and cinnamon and mix until combined.  Spoon 1/4 of mixture onto pan and spread into a pancake shape.  Cook until bubbles start to form around pancake then flip and cook other side.  Serve with some maple syrup or warm peanut butter.  YUM.  Enjoy
